The Beaumont Noble Late Harvest consists of 58% Semillon and 42% Sauvignon Blanc botrytis grapes.  Once Botrytis starts to develop due to specific climatic conditions, great care is taken in the vines to assure optimum growth of the Botrytis fungus on the grapes.  Hand-selection of berries takes place in the vineyard, thereafter it gets delivered to the cellar in small crates and immediately pressed to a stainless steel tank for cool and slow fermentation.

Vinification: A slow and hard press of whole bunches, settled at a cold temperature and inoculated with specialized yeast. The first stage of fermentation took place in stainless steel, where after it was racked to barrel to complete fermentation and maturation.
Maturation: 7 months in French oak barrels.
