The Beaumont Noble Late Harvest consists of 58% Semillon and 42% Sauvignon Blanc botrytis grapes. Once Botrytis starts to develop due to specific climatic conditions, great care is taken in the vines to assure optimum growth of the Botrytis fungus on the grapes. Hand-selection of berries takes place in the vineyard, thereafter it gets delivered to the cellar in small crates and immediately pressed to a stainless steel tank for cool and slow fermentation. |
